First Lady Michelle Obama is on the front lines in the fight against childhood obesity, an epidemic that's tripled over the past 30 years in the U.S. Her latest push is for salad bars in schools. Only about 15% of schools now have salad bars.
United Fresh Produce Association is donating the salad bars to schools that are mostly in low income neighborhoods. Each salad bar costs $2,500.
By exposing kids to fruits and vegetables, there's a higher chance students will give it a try. It's an approach that's working for one Bradenton school in Manatee County.
When Daughtery Elementary students enter the lunch line, they're greeted with a colorful selection of fruits and vegetables.
"What works is we have lots of different choices, bright colors displayed nicely. Kids are going to eat with their eyes," explains Sandra Ford, Director of Food and Nutrition Services for Manatee County School District. She adds, "Research shows if they get to choose it, they are more likely to eat it."

Child obesity is a problem, but as a general rule, kids eat what they know, that is what they are exposed to at home.

Also, vegetables in salad bars tend to not be very good. Salad bars are not the best introduction to vegetables for kids who are not used to eating them.

I support the Anti-obesity focus, but don't think this will prove very successful.
